An activated mana ability doesn't go on the stack — it can't be targeted, countered or responded to (605.3b). Your opponent would have had to kill the Elves before the activation.
The fine print
Not everything that produces mana is a mana ability: it must not have a target and must not use a loyalty symbol. An ability with a target (": target …") or a regular trigger goes on the stack as usual — and can be responded to.
The frustration Bolt
Your opponent can of course still kill the Elves — but your stays in your mana pool, and you cast your spell as planned.
